Everybody loves Hummus, especially me! I think its the perfect lunchtime snack or addition to a healthy meal. I have recently started making my own Hummus so I thought I would share one of my favourite recipes with you.
Butternut Squash is one of my favourite Winter vegetables and I try to eat as much as possible. I was over the moon when I found out you could put it in Hummus! This is a super simple recipe that only takes you about 10 minutes to make and leaves you with enough Hummus for a whole week.
For this recipe you will need:
- Butternut Squash
- 1 tin of chickpeas
- 1 teaspoon of Tahini
- A squeeze of lemon juice
- A blender
I used pre-prepared butternut squash chips but you can prepare it yourself if you want to. I only used a handful of squash as it adds a lot of flavour to the Hummus and gives it a creamy texture. Put the Butternut Squash on a baking tray and roast at 200ºc for 20 minutes until it is soft.
Now the hard part is over!
Next drain your Chickpeas and put them into a blender along with the roasted Butternut Squash, Tahini, Salt and pepper.
Add a squeeze of lemon to add some extra zingy flavour! I usually add a splash of water to avoid it becoming dry like the sahara desert. Once this is done, blend until it is smooth.
Now add some olive oil and pepper and enjoy the creamy delight that is Hummus! I usually eat mine with toasted Pita Bread or Carrot sticks!
