It has been snowing here for the past few days so I really needed something to warm me up. Cosy days are my favourite type of day and a snow day is the perfect excuse to have one. Broccoli and Stilton is my all time favourite soup and is super easy to make so I thought I’d share it with you incase you need an excuse to have a cosy day!
Broccoli is my most favourite vegetable and its so good for you! Broccoli is full of vitamins, is a really good source of protein and fibre and is packed full of potassium, iron and calcium.
You Will Need
- One stick of Celery chopped
- One medium Potato diced
- One Leek chopped
- Whole Broccoli chopped
- 140g of stilton (more or less depending on how cheesy you want it)
- One Litre of Chicken stock
- A little bit of Butter
First melt the Butter in the pan then add the Leek, Celery and potato. Stir it all together and then cover with a lid for about 5 minutes to let the veggies sweat (check it a few times).
Next stir in a Litre of Chicken stock and pop the lid on again. Cook for 10 – 15 minutes until all the veggies are soft!
Transfer the veggies and stock into a blender (unless you like it chunky) and blend until its completely smooth and super green! Now pour the soup back into the pan and crumble in the stilton and stir until its all melted and yummy.
Now your soup is ready to eat! I put mine into a bowl and crumbled some extra cheese on top. I usually have soup with some nice crusty bread or toast (even a toast if your feeling wild).
